I recently had a sugar cookie order for 36 XL 6" frisbees, and I was really worried about packing them up and not damaging the icing. Royal icing, even after setting, runs the risk of chipping or crumbling when jostled! I devised a way to use the side edges of the box lids to create divisions to nestle each cookie AND provide a stackable surface. It was a huge success and I wanted to share my engineering solution. Take your piped buttercream flower designs to the next level and get airborne! I really wanted to create an arrangement that felt light and organic and still showed a lot of cake. This is a wonderful technique to bring in a modern spray bouquet effect that is completely edible - no wires required. Be sure to allow the fondant to dry before piping and try not to hold the bud completely upside down, it may fall off! Glossy SMBC is achieved by chilling the meringue and the butter before combining.
